Hump Day

Well...I must say I was dragging BIG TIME today.  Had a fabulous walk with my pal, about 3.5 mi.  Squats holding Wyatt (18 lbs), and my shoulders are feeling the burn after oodles of laundry :)  I completely understand now how my clients who are moms feel.  Literally- the workout must  be incorporated ALL DAY LONG!  That is exhausting sometimes.  However, "I can do all things through Christ who strengthens me."  PHIL 4:13.  One of those days where I need to have this repeating in my head over and over....Wyatt's reflux and spit up is just CONSTANT!  It seems to be improving since he's been back on his medicine but it wears on this mama's heart! (and unfortunately all over my clothes...).  He is super close to crawling and thus his various foods being barfed all over my carpets.  Super fun!!  Kiddos are the best though, I must say.  The life of a stay at home mom/wellness coach (that's what I'm going to call myself anyways) is a blessed life.  SO just a fun fact for the few of you who actually are reading this blog, I made chicken breasts in the crockpot last week and they were DELISH!!  Nick was very skeptical because he is Mr. Chickenbreastistooleanforthecrockpot guy.  But he was wrong.  Such a cheap and easy way to have lean protein on hand and to cook in bulk when grilling and baking gets bland.  Throw in a can of pineapples or a jar of salsa and SHAZAM!  So I leave you with a few questions...

  1. Thai Chicken

    2lbs chicken breast or chicken pieces, bone-in
    1 cup hot Salsa
    1/4 cup peanut butter
    1tbsp soy sauce
    2tbsp lime juice
    1 tbsp minced ginger

    Place chicken pieces in crockpot. Combine remaining ingredients and pour over chicken. Cook on high 4-5 hrs, or low 7-8 hrs. Serve over rice, pasta, or egg noodles. Can top with chopped peanuts or cilantro, if desired.

  2. BBQ Chicken
    6 chicken breasts
    1/2 c Italian dressing
    12 oz bbq sauce (bullseye is best)
    2T Worcestershire sauce
    1/4 c brown sugar

    mix ingredients, pour over chicken and cook on high for 4 hrs


    Best part of my day= hearing my little man laugh with his sister

  3. Thanks ladies...Arlene I am trying yours first...holy moly that sounds awesome. Doing it tonight...need to leave off the rice, pasta, and noodles though bc we are "cleansing." Wondering how some mashed cauliflower might go with it??

    Love the blog and the shout out. At least I'm assuming that I was the "pal" in the walk and it wasn't the lady on your right...who wanted to join the conversation. :)

    We have LOTS of chicken crock pot recipes. I will work on getting some to you.

    Quick work out of the day: Run around after your 18-month-old at the park...in the Florida heat. That was this morning. :)
